How do you say, French Filet?

These lovely green beans are once again gracing our dinner plates with their tender, tasty goodness!



Since I started growing these French Filet type beans a few years ago, we have been forever spoiled! I haven't planted a regular green bean since then. (Although in all fairness, I would if I were still canning beans, since these are not suited for that purpose.) The Filet beans (Haricot Vert) Phaseolus vulgaris are thinner and more tender than other beans. These are the type served in classy restaurants, and for good reason.....they just taste wonderful! The variety I grow is called 'Straight'N Narrow' from Nichols Garden Nursery.

If you've never grown Filet beans, you owe it to yourself to try them! I just planted my second row for a fall crop.

Yum.....I'll have to try those next time around! You said you're planting some for a fall crop, so they do ok in cooler weather?

Chris - We will be having them alongside Spaghetti, topped with sausage sauteed in olive oil, garlic and some fresh Basil from the garden. :-)

Krista - These bear for me up until frost, sometime in mid to late October here in my zone 6b.

I think I'll have to try these too - they look tender and yummy in the photo even! I generally only do tomatoes and herbs - but think I might just have the place to do some haricot vert!

Connie, Now I really cannot wait! Mine are finally flowering. Hope to see beans soon. I had hoped they would be earlier than the pole beans, but it won't be by much.

I love French filet beans, probably more than any other variety of green beans. They are wonderful straight from the plant to the pot. Unfortunately the rabbits and ground hog love them as well so I don't plant them any more. :(

Why aren't they good for canning? They sure look yummy, wonder if they'd freeze okay?
